The fermentation process involves manual harvesting, total destemming, and slight crushing, followed by fermentation with maceration and contact with the skins for two months in clay pots, utilizing indigenous yeasts without temperature control. The wine is unfiltered and unrefined, preserving its natural character.
The resulting wine presents a mild salmon-red color and complex aromas of cherry and wood. On the palate, it reveals a great balance of acidity and freshness, with a well-structured body. With an alcohol content of 13%, this wine offers a unique tasting experience that reflects the traditional winemaking practices of the region.
