A rare single-cask Calvados from Normandy, selected as part of a collaboration between PM Spirits and spirits expert Alexandre Vingtier, drawn from the historic Cave Normande distillery in the Domfrontais region. It is produced from a traditional mix of apples and pears—sourced from old orchards with diverse heritage varieties—and distilled on a small, wood-fired column still typical of the region.
The spirit is then matured for an extraordinary 45 years in French oak, where long, slow aging allows extensive oxidation and concentration, developing deep complexity and a pronounced rancio character. Bottled at cask strength without additives or filtration, it reflects a pure, unadulterated snapshot of long-aged Calvados.
The result is a profoundly layered spirit defined by dried fruit richness, spice, and oxidative depth, shaped as much by time in wood as by its orchard origins.
