"Planted in soil characterized by schist and granite, the grapes are produced using an integrated production system and are harvested at their perfect state of ripeness. The grapes are harvested manually, in 20kg boxes, at night, allowing for a more careful selection and better preserving the aromas. In the winery, they pass through the sorting table where a rigorous selection is made, with entry into the fermentation vats by gravity. Spontaneous alcoholic fermentation.
