A traditional craft Calvados from Normandy, made by Julien Frémont on a biodynamically farmed estate in the Pays d’Auge. The spirit is produced entirely from heirloom cider apples grown in old orchards where cows naturally maintain the grass and enrich the soil, creating a deeply agricultural, living ecosystem behind the fruit.
The apples are hand-harvested, slowly pressed, and fermented into dry cider using native yeasts before distillation. The resulting eau-de-vie is typically distilled in a traditional column still and then aged in a combination of seasoned French oak barrels, where it develops slowly over several years. This long maturation softens the spirit while building complexity and integration.
The result is an elegant, orchard-driven Calvados with pure apple character, gentle spice, and subtle notes of vanilla, dried fruit, and warm oak. Smooth, balanced, and quietly expressive, it reflects both traditional Normandy craftsmanship and a natural, low-intervention philosophy.
