Slow food and slow wine are magic phrases of my taste for living.

Slow wine is similar to slow food, but a little more complex: it also takes time to make, but it needs more time to give a harmonious flavor and even more time to show its quality to the fullest.

What I want is to make pure slow wines, those that you drink five or six years after harvest and that you admire in the coming decades. In addition to slow wines, my wines (of minimalist oenology), should always privilege the character of perfection, because soulless perfection or characterless perfection makes wine, like people, tiring." -Winery notes
