Domaine Raphael Dubois Savigny-les-Beaune 2020

"All the famous Burgundy appellations come from the same grape variety : the « Pinot Noir ». Savigny les Beaune village is next to Aloxe Corton and Pernand Vergelesses. It begins at the Rhoin Valley and ends at Bouilland. Camille Rodier claims this wine to have fine perfumes which are soft, good for health, and of great flavour. These parcels are aged of 7 and 40 years. Wines stay 15 months in cellar before being bottled. During this period, the wine undergoes a second fermentation named malolactic fermentation which allows it to stabilise its structure. It spends about 6 to 9 months of its life in oak barrels with one third in new barrels, in order to give it the necessary tannin. After, the wines are prepared for bottling." -Winery notes
