We are pleased to announce another special winemaker dinner...

The Wines of Terry Theise
Tuesday, June 5th at 7:00pm
Sapa - Ground Floor, 43 West 24th Street

No man has introduced Americans to more great wines than the legendary raconteur and wine importer Terry Theise. His quest for soulful, harmonious wines from small, distinctive estates in Germany and Austria has raised the standards for the entire industry. Thankfully his contributions have not gone unrecognized, he was selected as Importer of the Year by Food & Wine Magazine in 2005, Man of the Year by Wine and Spirits Magazine in 2001 and Robert Parker described him as "One of The Most Influential Wine Personalities of the Last 20 Years" in Wine Advocate's issue 120. He is one of the most colorful figures in the wine business and we will be sharing the outstanding 2005 vintage with him and three of his finest winemakers.

No discussion of German wine is complete without mentioning Weingut Selbach-Oster who have been producing precise, focused, age worthy wines on their Mosel estate since 1661. Johannes Selbach their winemaker and director is a master of Riesling who was honored by Robert Parker in his book "The World's Greatest Wine Estates." We are thrilled to announce he will be joining us for this dinner.

Schlossgut Diel is an elite, blue-chip estate producing scintillating terroir-driven Rieslings in the Nahe. "La Revue du Vin de France" chose them as one of the best wineries outside of France. Armin Diel the proprietor is an outspoken maverick whose wines are full bodied but retain the food friendly elegance we expect from German Rieslings. We believe these stellar wines will stay with you long after you enjoy this meal with the charming Caroline Diel.

With vineyards situated on the steeply terraced slopes around Langenlois, Weingut Bründlmayer is widely recognized as Austria's greatest winery. Their Grüner Veltlliners are probably the best value in the world for great white wines and their Rieslings have structure, complexity and a voice all their own. Representing Bründlmayer will be Thomas Klinger who has worked at the estate for many years.

Sapa For this dinner we chose Restaurant Sapa, where superstar chef Patricia Yeo has received raves for her stylish blend of French and Vietnamese cuisine. The sophisticated balance of sweetness and acid in pan-asian food will be complimented perfectly by the off-dry German wines and the acidic brightness of Grüner Veltliner to create a night of explosive and unforgettable flavors. We will also enjoy Sapa's stunning design which was created by AvroKO the design team which won the Outstanding Restaurant Design Award from the James Beard Foundation in 2004.

We will announce the wines to be poured next week, but in the meantime here's the menu to whet your appetite...

Smoked Swordfish Carpaccio
Seaweed salad, cucumber ribbons, reduced orange emulsion
Grilled Maya Prawns
Kaffir lime marinade, stir fry sugar snaps, bok choy, & cashews

Main Course
Cod in Parchment
Porcini butter, roasted mushrooms, cauliflower puree
Chicken Roulade
Bacon, grilled asparagus, garlic chive sauce

Dessert
Pistachio Crčme Brulee
Pistachio cookie
Carmelized Apple Pain Perdu
Rum caramel sauce

Payment is required in full at time of reservation to guarantee a seat. Cancellations received less than two weeks but more than five days prior to each seminar will be refunded with store credit only. Cancellations received within five days of each seminar will not be refunded.

Saké Some of you may have noticed that we have slowly but surely been expanding our selection of Premium Saké. When we first started tasting, we were amazed at how much variety is available, and how complex Sakéworld can be. Like wine, there are thousands of things that can dramatically change the flavor profile of Saké as it is being produced... two brew-masters can start with identical ingredients and end up with completely different results. We also became aware that looking at a Saké label can seem like a mind boggling experience, and with all sorts of statistics to take into consideration, it sometimes feels like a scientific experiment when buying a bottle.

Saké Six Pack However, all these nuances work out well in the end, as we just end up with a wider choice... and although Saké has many ambiguities when comparing one next to another, the same Saké will change minimally from year to year. With all these factors in mind, we have put together a six pack of 300ml bottles for under $100 to give you a taste of the many aspects of Sakéworld... they are all from different regions, made from a wide range of rice, yeast & water. The polishing grades are different, as are the production methods used.

Fukucho Junmai Ginjo - Moon On The Water - Hiroshima
Soft well water and no charcoal filtering results in a delicately fragrant, melt-in-the-mouth Saké. Made by one of only 20 or so female Saké-makers in Japan.

Chikurin Fukamari Junmai - Bamboo Forest "Depth" - Okayama
Soft, relaxed and mellow, with notes of peaches and strawberries. It is a great complement for yakitori, nutty cheeses and spicy Italian meats.

Koshi No Tosetsuka Ginjo - Flower In Winter, Snowing In Koshi - Niigata
Produced by the Echigo clan of brewers, the rice is an even blend producing a well balanced yet super-dry Saké.

Mantensei Junmai Ginjo - Star Filled Sky - Tottori
Soft, honey-laced nose with just a touch of fruitiness. Dry overall, this Saké exhibits good richness and balance, but with a sweet element creeping out of the background.

Shirakawago Sasa Ginjo Nigori - Lightly Cloudy - Kyoto
Milky white, unfiltered with earthy aromas.

Kasumi Tsuru Namazake Genshu - Crane Of Kasumi - Hyogo
A seasonal spring Saké - unfiltered and unpasturized giving it a brash liveliness.
